Apple Cinnamon Roll Casserole

This easy apple cinnamon roll casserole combines soft cinnamon rolls with warm, spiced apple pie filling for a comforting breakfast or brunch treat. With just two simple ingredients, this cinnamon roll casserole delivers all the flavor of a homemade bake with minimal effort.

Two-ingredient Apple Cinnamon Roll Bake

I’m a sucker for minimal-ingredient recipes, and this is about as easy as it gets. This apple cinnamon roll casserole uses the same two ingredients as my Cinnamon Roll Apple Pies but transforms them into a cozy, shareable bake. 

I love making this for a quick but satisfying weekend breakfast when I want something warm and filling without much prep. It also doubles as a crowd-pleasing dessert. Just add a scoop of vanilla ice cream and a drizzle of caramel sauce for a treat that always gets compliments.

Ingredients

  • Refrigerated cinnamon rolls – The base of the casserole plus icing for topping.
  • Apple pie filling – Adds juicy apples and a sweet, gooey filling. Use homemade filling if you prefer.

How to Make the Cinnamon Roll Casserole

  1. Prep Preheat your oven to 350 degrees F. Lightly grease a 9×13-inch baking dish.
  2. Cut the cinnamon rolls – Open the cinnamon rolls and set aside the icing. Cut each roll into quarters.
  3. Cut the apples – Open the can of apple pie filling and cut the apple slices into smaller chunks. I do this right in the can with a knife.
  4. Assemble the casserole – Arrange the cut cinnamon rolls evenly in the baking dish. Drop spoonfuls of the apple pie filling over the cinnamon rolls. Not all of the rolls will be covered, and that’s okay.
  5. Bake Place the dish in the oven and bake for 35 to 40 minutes or until the cinnamon rolls are golden and cooked through.
  6. Add the icing Remove the casserole from the oven and drizzle the reserved icing over the warm casserole before serving.

Variations and Substitutions

  • Use different pie fillings Swap the apple pie filling for cherry, peach, or blueberry for a different flavor twist.
  • Add nuts Sprinkle chopped pecans or walnuts over the casserole before baking for added crunch.
  • Spice it up – Stir a little ground cinnamon or nutmeg into the apple pie filling for extra warmth.
  • Serve with toppings Top warm servings with vanilla ice cream, whipped cream, or a drizzle of caramel sauce.

Tips for Success

  • Cut the apples smaller Chopping the apple slices into smaller pieces helps them spread more evenly across the casserole.
  • Don’t worry about full coverage It’s okay if not every cinnamon roll piece is covered with filling; this gives the casserole texture and variety in each bite.
  • Check for doneness Ovens vary, so check the center of the casserole to make sure the cinnamon rolls are fully baked before removing from the oven.
  • Prevent over-browning If the cinnamon rolls start getting too dark before the center is done, loosely cover the pan with foil and continue baking.
  • Drizzle icing while warm – Adding the icing while the casserole is still warm helps it melt slightly into the rolls for extra flavor.

Storage

Store any leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave for about 20 to 30 seconds until warmed through. 

The casserole can also be frozen for up to 2 months. Wrap the casserole dish in plastic wrap, then foil, or transfer it to a freezer-safe container for storage. Thaw in the refrigerator overnight and warm in the oven or microwave before serving.
