S’mores Marshmallow Pops take everything people love about classic s’mores and turn it into a neat little chocolate-dipped treat on a stick. Soft marshmallows are coated in melted Hershey’s chocolate and finished with graham cracker crumbs for a fun dessert with plenty of nostalgic flavor.

S’mores Marshmallow Pops

I’ve been on a s’mores kick lately, and I have a whole collection of s’mores recipes coming out, including my S’mores Poke Cake and S’mores Brownies. S’mores really are the quintessential summer dessert, and I love finding new ways to use that same chocolate, marshmallow, and graham cracker combo in recipes that are easy to serve and fun to share.

These S’mores Marshmallow Pops take the main flavors of classic s’mores and turn them into a portable treat that works so well for dessert tables, parties, and make-ahead sweets. They’re also much easier for little kids to eat than traditional s’mores, and they would be adorable as wedding dessert table favors sealed in individual plastic bags with a cute ribbon.

Ingredients

  • Marshmallows – Regular-size marshmallows form the center of each pop and give the treats their classic s’mores texture.
  • Lollipop sticks – These make the marshmallows easy to dip, decorate, serve, and eat.
  • Hershey’s milk chocolate bars – Melted milk chocolate coats the marshmallows, giving the pops that familiar s’mores flavor.
  • Graham cracker crumbs – Graham cracker crumbs add the crunchy finish and complete the s’mores flavor.

How to Make Chocolate Covered Marshmallows

  1. Add the sticks – Push a lollipop stick into the center of each marshmallow, making sure it is secure but does not poke through the top.
  2. Melt the chocolate – Break the Hershey’s bars into pieces and melt them in a microwave-safe bowl in short intervals, stirring until smooth.
  3. Dip the marshmallows – Dip each marshmallow into the melted chocolate, turning it so the sides are coated.
  4. Add the graham cracker crumbs – Dip the chocolate-coated marshmallow into the graham cracker crumbs before the chocolate sets.
  5. Let them set – Place the marshmallow pops on a parchment-lined plate or baking sheet and chill until the chocolate is firm.

Variations and Substitutions

  • Use different chocolate – Swap the milk chocolate for semi-sweet chocolate, dark chocolate, or white chocolate.
  • Try chocolate chips or melting wafers – Chocolate chips or chocolate melting wafers can be used in place of Hershey’s bars if preferred.
  • Add sprinkles – Use sprinkles along with the graham cracker crumbs for birthday parties, holidays, or themed dessert tables.
  • Use flavored marshmallows – Vanilla, strawberry, or chocolate marshmallows can add a different flavor to the pops.

Tips for Success

  • Use fresh marshmallows – Fresh marshmallows are easier to skewer and have a softer texture when dipped.
  • Melt the chocolate slowly – Heat the chocolate in short intervals and stir often so it stays smooth and does not scorch.
  • Decorate one at a time – Dip one marshmallow in chocolate, then coat it in graham cracker crumbs right away so the crumbs stick well.
  • Use a small bowl for the crumbs – Add the graham cracker crumbs to a small bowl and roll each chocolate-coated marshmallow in the crumbs for the easiest coating.
  • Use parchment paper – Place the dipped pops on parchment paper so they lift off easily once the chocolate is firm.
  • Chill just until set – Refrigerate the pops for 5 to 10 minutes, just until the chocolate is firm. Do not store them in the fridge because the marshmallow’s texture can change.

S’mores Marshmallow Pops Recipe

These S’mores Marshmallow Pops are made with soft marshmallows dipped in melted Hershey’s chocolate and coated in graham cracker crumbs. They are a fun, portable dessert with all the classic s’mores flavor in a neat little treat.

Instructions
 

  • Line a plate or baking sheet with parchment paper.
  • Push one lollipop stick into the center of each marshmallow, being careful not to push it through the top.
  • Break the Hershey’s chocolate bars into pieces and place them in a microwave-safe bowl.
  • Microwave the chocolate in 15-second intervals, stirring well after each interval, until melted and smooth.
  • Add the graham cracker crumbs to a small bowl.
  • Dip one marshmallow into the melted chocolate, turning it to coat the sides.
  • Immediately roll the chocolate-coated marshmallow in the graham cracker crumbs so the crumbs stick.
  • Place the finished marshmallow pop on the parchment-lined plate or baking sheet.
  • Repeat with the remaining marshmallows, dipping and coating each one before moving to the next.
  • Refrigerate the pops for 5 to 10 minutes, just until the chocolate is firm. Remove them from the refrigerator once set.

Notes

  • Store S’mores Marshmallow Pops in an airtight container at room temperature for up to 2 days. Do not store them in the refrigerator, as the cold can change the texture of the marshmallows. If you use the fridge to set the chocolate, chill them for only 5 to 10 minutes, then remove them once the chocolate is firm.
  • Each 1.55-ounce Hershey’s bar will coat about 6 marshmallows.
