Cake Mix Oatmeal Raisin Cookies
Cake mix oatmeal raisin cookies are a shortcut version of a classic, made with yellow cake mix, oats, and plenty of raisins. They bake up soft and chewy with a hint of cinnamon and nutmeg for that warm homemade flavor.

Easy Oatmeal Raisin Cake Mix Cookies
Oatmeal raisin cookies are one of my husband’s favorites, so, of course, I had to put a semi-homemade twist on them. These start with a box of yellow cake mix, which makes the dough super easy to throw together. They’re soft and chewy and have just the right balance of cinnamon and nutmeg to make them feel cozy and familiar.
I usually use oil in my cake mix cookies because it’s more cost-effective, but butter is a must for these cookies. It gives them an extra layer of richness. I usually use a 2-tablespoon scoop for my cookies like my Cake Mix Peanut Butter Cookies, but these don’t spread as much, so I recommend using a slightly larger 3-tablespoon scoop.

Ingredients
- Yellow cake mix – Adds structure and a soft, sweet base.
- Brown sugar – Adds moisture and a hint of caramel flavor.
- Cinnamon – Gives warm, classic spice.
- Nutmeg – Adds a subtle, cozy flavor.
- Unsalted butter – Makes the cookies rich and chewy.
- Eggs – Help bind the dough.
- Old-fashioned oats – Add texture and chew.
- Raisins – Adds sweetness to every bite.

Making the Chewy Oatmeal Raisin Cookies
- Prep – Preheat the oven to 350 degrees F and line two baking sheets with parchment paper.
- Mix dry ingredients – Stir together the cake mix, brown sugar, cinnamon, and nutmeg in a large bowl.
- Add wet ingredients – Mix in the melted butter and eggs until mostly combined.
- Stir in oats and raisins – Fold in the oats and raisins until the dough is evenly mixed.

- Scoop – Use a 3 tablespoon scoop to portion dough onto baking sheets, leaving 1 ½ inches between each.
- Bake – Bake for 10 to 13 minutes, until edges are set and centers look slightly underbaked.
- Cool – Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Variations and Substitutions
- Chocolate twist – Swap raisins for chocolate chips for a sweeter cookie.
- Add nuts – Mix in ½ cup chopped walnuts or pecans.
- Extra spice – Try a spice cake mix instead of yellow.
- Fruit swap – Use golden raisins or dried cranberries instead of raisins.

Tips for Success
- Use real butter – It makes a big difference in flavor and texture.
- Mix dry ingredients – Whisk dry ingredients together before adding wet for even distribution.
- Don’t overbake – Pull them when the centers still look a little soft.
- Cool on the baking sheet – Letting them sit for a few minutes before transferring to a cooling rack helps prevent breakage.

Storage
Store the cookies in an airtight container at room temperature for up to 5 days.
The cookies can be frozen in a freezer-safe container or bag for up to three months. Thaw at room temperature before enjoying.
