These cake mix oatmeal raisin cookies are a semi-homemade take on a classic. Starting with a cake mix base, these cookies are soft, chewy, and full of warm spices.

Ingredients
  

  • 1 (15.25 ounce) box yellow cake mix
  • 1/2 cup brown sugar
  • 1 1/4 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup unsalted butter melted
  • 2 large eggs
  • 2 cups old-fashioned oats
  • 1 1/2 cups raisins

Instructions
 

  • Preheat oven to 350 degrees F and line two baking sheets with parchment paper.
  • Whisk together the cake mix, brown sugar, cinnamon, and nutmeg in a large bowl.
  • Add the melted butter and eggs and mix until mostly combined.
  • Stir in the oats and raisins until the dough is fully mixed.
  • Use a 3-tablespoon scoop to portion the dough onto baking sheets, spacing cookies a few inches apart.
  • Bake for 10 to 13 minutes or until the edges are set and the centers look slightly underbaked.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Store the cookies in an airtight container at room temperature for up to 5 days.
  • The cookies can be frozen in a freezer-safe container or bag for up to three months. Thaw at room temperature before enjoying.
