Easy Chicken Fajitas

I make these Air Fryer Chicken Fajitas at least once a week—they’re just so easy and convenient. Once I started cooking fajitas in the air fryer, I couldn’t believe how fast everything came together, and honestly, I haven’t reached for a skillet since (except for when I make my Ground Beef Fajitas)!

This has become my go-to dinner when time is short but I still want something flavorful. The chicken cooks up juicy, the peppers stay crisp-tender, and the seasoning really brings it all together. One of my favorite parts is having leftovers. I’ll usually toss them over rice or into a salad for a quick lunch the next day. Pro tip: if you slice the chicken and veggies ahead of time—either the night before or earlier in the day—you can have everything in the air fryer and cooking in just a couple of minutes.

Ingredients

  • Chicken breasts – The main protein in the recipe, sliced thin so it cooks quickly and evenly in the air fryer.
  • Bell peppers – Adds color, crunch, and a slightly sweet flavor that balances the seasoning.

  • Fajita seasoning – Adds bold, classic fajita flavor. Use homemade seasoning if you prefer.

Making the Fajitas in the Air Fryer

  1. Preheat the air fryer – If your air fryer has a preheat function, set it to 400 degrees F. If not, manually set it to 400 degrees F and let it run for 4-5 minutes before adding the fajitas.
  2. Prepare ingredients – Slice the chicken breasts, onion, and bell peppers into 1/4-inch thick strips. Place them in a large bowl.

  1. Season – Drizzle olive oil over the chicken and veggies. Sprinkle the seasoning mix over the top. Toss until well combined and evenly coated.
  2. Air fry – Add the seasoned chicken and veggies to the preheated air fryer basket. Cook for 14 minutes or until the chicken reaches an internal temperature of 165 degrees F, stirring well once halfway through.
  3. Serve – Serve in warm tortillas and top with your favorite toppings.

Variations and substitutions

Homemade seasoning – Make homemade fajita seasoning blend by combining 2 teaspoons each of cumin and chili powder, 1 teaspoon each of garlic powder, onion powder, and a pinch of cayenne pepper.

Bell peppers – While green and red are traditional bell pepper colors for fajitas, feel free to mix it up with a variety of bell pepper colors. I like using at least two colors to add some fun color.

Onion options – Use yellow, white, or red onions interchangeably to suit your preference. Each brings its own unique flavor to the dish.

Tips for success

  • Adjust cooking time – The cooking time may vary based on your air fryer model and the thickness of the chicken strips. Always check the internal temperature of the thickest piece to ensure it reaches 165 degrees F before serving.
  • Uniform size and thickness – Cut your chicken and veggies into uniform size and thickness to ensure even cooking. This helps maintain consistency in texture and doneness.
  • Batch cooking – Depending on the size of your air fryer, you may need to cook this recipe in two batches. Ensure there’s ample space for air circulation, promoting even cooking. This recipe was tested in a 7-quart Gourmia air fryer and was cooked in one batch.
  • Meal prep friendly – This recipe is perfect for meal prep. Serve the fajita mixture over rice with refried beans to create a flavorful bowl, or add it to salads for a convenient and tasty lunch option.

Storage

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat leftovers in a 350-degree F air fryer for 3-4 minutes or in the microwave for 2-3 minutes.

I do not recommend freezing the cooked fajitas as the veggie texture becomes mushy when thawed.
