  • Use high-quality white chocolate – For the best taste and texture, I recommend Ghirardelli, Guittard, or Lindt. Avoid Toll House white chocolate chips, as they don’t melt as smoothly. Avoid using white candy melts for the base as the flavor is not a good as white chocolate.
  • Watch the chocolate closely – Melt in short intervals and stir frequently to avoid overheating, which can cause the chocolate to seize.
  • Work quickly – Once the chocolate and candy melts are melted, spread and swirl them right away before they start to harden.
  • Soften if needed – If the chocolate sets too quickly before swirling, place the tray in a 200-degree F oven for a few minutes to soften it.

Storage

Store leftovers in an airtight container in a cool, dry place at room temperature for 4-5 days or in the refrigerator for up to two weeks. Note that the M&Ms may develop a cloudy appearance if stored in the fridge, but the bark will still be okay to eat.
