Easy Crockpot Sausage Cheese Dip

I’m such a sucker for a cheesy, creamy dip, and this Crockpot Rotel Sausage Dip is hands-down one of my favorites. I love how easy it is to make. It’s one of those appetizers you can toss in the slow cooker and forget about, aside from the occasional stir to keep everything smooth and melty.

I’m all about slow cooker appetizers for entertaining. You set it and let the slow cooker do its thing. My grape jelly little smokies and cranberry meatballs are perfect examples; they’re always a hit and require minimal effort. This dip falls right into that same category of easy, party food.

It’s a favorite at my house on game day, but honestly, it works for any gathering. I’ve made it plenty of times for card game nights with friends or New Year’s Eve get-togethers. No matter the occasion, it always disappears fast. People will crowd around the slow cooker with chips in hand. It’s that good!

Simple Ingredients

  • Ground pork sausage – Adds savory flavor and a hearty texture. A good-quality, flavorful sausage is recommended. You can use mild or spicy sausage, depending on your preference. 
  • Velveeta cheese – Creates a smooth, melty, cheesy base.
  • Rotel (diced tomatoes with green chilies) – Adds flavor and a hint of spice.

Making the Creamy Sausage Dip

Storage

Store the crockpot sausage dip in an airtight container at room temperature for 3-4 days. Reheat it in a saucepan on the stovetop over low heat or in the microwave in 30-second increments, stirring frequently, until heated through.

The dip can be frozen for up to three months. Allow the dip to cool completely before transferring to an airtight container or freezer bag for storage. Thaw in the refrigerator before reheating.
