In a large bowl, whisk together pudding mix and cold milk for 2 minutes until thickened.
Divide pudding evenly among 3 bowls. Tint each with a few drops of food coloring—one blue, one yellow, one pink. Stir until smooth.
Start with a spoonful of golden Oreo crumbs at the bottom of each cup. Then alternate spoonfuls of the colored pudding and Oreo crumbs to create layers. Repeat until the cups are almost full, leaving a little space on top.
Place shredded coconut and a couple drops of green food coloring in a zip-top bag. Seal and shake until evenly coated.
Sprinkle the green coconut on top of each cup.
Add a Peeps bunny and a few mini eggs to decorate.
Chill in the fridge for at least 30 minutes before serving.
- Assembled pudding cups should be stored in the refrigerator, covered with plastic wrap or lids if your containers have them. They’ll stay fresh for up to 3 days. For best texture, add the coconut, Peeps, and mini eggs just before serving to keep them from getting too soft. If you need to prep further ahead, store the colored pudding and toppings separately and assemble the cups the day of.
