Instructions

  • Add the Mint Oreos to a food processor and pulse until fine crumbs form.
  • In a large bowl, use a hand mixer to blend the Oreo crumbs and softened cream cheese until smooth and fully combined.
  • Use a 1-tablespoon scoop to portion the mixture, then roll into evenly sized balls. Place on a parchment-lined baking sheet.
  • Refrigerate for at least 30 minutes, or until firm.
  • Melt the almond bark according to package directions until smooth.
  • Dip each chilled truffle into the melted almond bark, tapping off excess coating before placing back on the lined baking sheet.
  • If using, melt the green candy melts and drizzle over the coated truffles.
  • Allow the coating to fully set before serving or storing.

Notes

  • Use full-fat, brick-style cream cheese for the best texture and structure. Spreadable cream cheese can make the filling too soft.
  • Store in an airtight container in the refrigerator for up to 1 week.
  • Freeze in a freezer-safe container for up to 2 months. Let frozen truffles thaw in the refrigerator before serving for the best texture.
