Rainbow Jello Poke Cake

This easy rainbow poke cake combines a white cake mix with colorful Jello and is topped with whipped topping and sprinkles. It's a vibrant, fun dessert perfect for any celebration.

Ingredients
  

  • 1 box of white cake mix plus ingredients listed on the package
  • 1 (3 ounce) box of red Jello plus water to make the jello
  • 1 (3 ounce) box of orange Jello plus water to make the jello
  • 1 (3 ounce) box of yellow Jello plus water to make the jello
  • 1 (3 ounce) box of green Jello plus water to make the jello
  • 1 (3 ounce) box of blue Jello plus water to make the jello
  • 1 (3 ounce) box of purple Jello plus water to make the jello
  • 1 (8 ounce ) tub of whipped topping thawed
  • rainbow sprinkles optional

Instructions
 

  • Prepare the white cake in a 9x13 inch pan according to the instructions on the package.
  • Once the cake has cooled, use the handle of a wooden spoon to poke holes evenly across the surface of the cake.
  • Prepare the Jello according to the package instructions. Pour the liquid Jello into the holes alternating between the colors. You won’t use all of the Jello, you only need about 1/2 teaspoon per hole.
  • Place the cake in the refrigerator to set the Jello for about 2 hours.
  • Once the Jello has set, spread whipped topping over the top of the cake.
  • Chill the cake in the refrigerator until ready to serve.
  • Finish by sprinkling rainbow sprinkles over the whipped topping.
  • Slice and enjoy!

Notes

  • Store leftovers covered in plastic wrap or in an airtight container in the refrigerator for up to three days.
  • You won’t use all of the Jello, you only need about 1/2 teaspoon per hole.
