Cookie Monster Cookies (From Cookie Mix)

Ingredients
  

  • 1 (17.5 ounce) bag of sugar cookie mix
  • 1/2 cup salted butter softened
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • blue food coloring
  • 1/2 cup mini Oreos cut in half
  • 1/2 cup mini Chips Ahoy! cut in half
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 32 large candy eyeballs

Instructions
 

  • Preheat oven to temperature specified on sugar cookie mix package. Line two cookie sheets with parchment paper.
  • In a mixing bowl, combine sugar cookie mix, softened butter, egg, and vanilla extract. Mix until dough forms.
  • Add a few drops of blue food coloring to dough and mix until evenly colored.
  • Gently fold in mini Oreos, mini Chips Ahoy!, white chocolate chips, and semi-sweet chocolate chips until evenly distributed.
  • Using a large scoop (approximately 3 tablespoons), scoop dough and roll into balls. Place on prepared cookie sheets.
  • Bake in preheated oven for 13-16 minutes or until edges are lightly golden brown.
  • Remove from oven and immediately press candy eyeballs into front of each cookie while still warm.
  • Allow cookies to cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.

Notes

  • Store leftovers in an airtight container at room temperature for 3-4 days.
  • They can be stored in the freezer for up to 2-3 months.
