Ingredients
  

  • 8 ounces penne pasta
  • 2 boneless, skinless chicken breasts diced into 1/2 inch pieces (about 1 1/2 pounds)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 (24-ounce) jar of marinara sauce 3 cups
  • 1/3 cup parmesan cheese shredded
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon Garlic powder
  • 1 1/2 cups Mozzarella cheese shredded

Instructions
 

  • Cook the pasta to just al dente, according to the package directions. Drain the pasta, reserving 1/2 cup of pasta water.
  • While the pasta cooks, season the chicken breasts with salt and pepper.
  • Heat the oil in a large skillet over medium-high heat and cook the chicken for 5-7 minutes or until browned and cooked through.
  • Add the Mariana, Italian seasoning, garlic powder, parmesan cheese, cooked pasta, and reserved pasta water to the pan and bring to a boil. Reduce the heat and simmer for 4-5 minutes to allow the flavors to meld.
  • Remove the skillet from the heat, sprinkle the mozzarella over the top, cover, and set aside for 5 minutes to allow the cheese to melt.
  • Serve hot and enjoy.

Notes

  • Store leftovers in an airtight container in the refrigerator for 3-4 days.
  • While this dish can be frozen, the texture of the pasta may change slightly upon thawing. To freeze, transfer cooled portions to a freezer-safe container or resealable plastic bag. Press out any excess air, seal tightly, and freeze for up to 2-3 months. Thaw in the refrigerator before reheating.
