Birthday Cake Cookies Recipe

Ingredients
  

Cookies

  • 1 (15.25 ounce) box yellow cake mix
  • 1/2 cup canola or vegetable oil
  • 2 large eggs
  • 1/2 cup rainbow sprinkles (plus more for decorating)

Frosting

  • 1/2 cup unsalted butter room temperature
  • 2 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • pinch of salt
  • 1–2 tablespoons milk

Instructions
 

  • Preheat the oven to 350 degrees F and line two baking sheets with parchment paper.
  • In a large bowl, mix the cake mix, oil, and eggs until a thick dough forms. Stir in the sprinkles.
  • Use a 2-tablespoon cookie scoop to drop dough onto the prepared baking sheets, spacing about 2 inches apart.
  • Bake for 9 to 11 minutes, or until the edges are set and the centers still look slightly soft.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • To make the frosting, beat the butter until smooth. Add powdered sugar, vanilla extract, and salt, then beat until fluffy, adding milk as needed to reach a spreadable texture.
  • Once the cookies are cool, frost each one and top with extra sprinkles

Notes

  • Store frosted cookies in a single layer in an airtight container at room temperature for up to 3 days.
  • Unfrosted cookies can also be frozen for up to 3 months; thaw and frost before serving.
  • If using a 13.25 ounce box of cake mix, reduce the oil to 1/3 cup.
  • Stick with jimmies for the sprinkles. Other types of sprinkles, like nonpareils, can bleed into the dough.
